Archaeus

      After destemming and crushing, the grapes are sent to fermentation where they remain in contact with the skins for a period of seven days. After racking off the Cannonau di Sardegna DOC it is aged in barrels and in vitrified cement tanks. It is released for consumption no earlier than 1 April following the harvest.

      It is preferable to drink it after at least one year from the harvest date, to allow the product to age in the bottle. It is a medium-aged wine, to be consumed within 3-4 years of the harvest date

Tarda Sera (“Late Night”)
